1 onion, chopped
1 garlic clove, finely chopped
2 carrots, diced
1 celery stick, chopped
1 tin chopped tomatoes
1 tin chickpeas
1 tin kidney beans
1 tsp chilli powder (or to taste)
1 pint of beef or vegetable stock
A squeeze of tomato puree
Salt and pepper to taste
Fry the onion, garlic, carrots and celery in a little oil for 10 minutes (or until soft), gradually stirring in the chilli powder, and salt and pepper to taste.
Add the other ingredients and simmer for 20 minutes.
Serve with rice, pasta, or cous cous and enjoy!
